Guacamole is such an easy thing to make. I have to admit, I wasn't really a fan of guacamole, or avocado for that matter, but then I made homemade guacamole for my b/f and now I love it. I have to say that the simpleness of it makes it even more appealing. I don't really want to call it a recipe, since it is so simple and requires little instructions, but I have included the recipe to make my version of guacamole. Now I just need a blender, so I can make my own strawberry margaritas and it would be a perfect start to my weekend.

Esther's Guacamole
3-5 Tablespoons Diced Red Onions
1-2 Tablespoons Diced Jalapeno (Seeds removed)
1 Avocado*
1-2 Tablespoons Lime Juice
Salt & Pepper to Taste
Optional: Cilantro, Serrano Pepper, Tomato, Corn... or splash of tequila :)
1. Remove avocado from the shell. I usually just halve the avocado, dice in the shell, then spoon the avocado out.
2. Pour lime juice over the avocado and mash the avocado to your desired level of chunkiness to smoothness. How much lime juice you use depends on how big your avocado is. You want to make sure to add enough lime juice to coat the avocado and keep the guacamole from turning a brownish-green color.
3. Mix in the onions and jalapeno.
4. Add salt & pepper to your liking. I usually add very little salt, since the chips are salty. You can also add chopped cilantro or any of the other optional ingredients.
*Make sure the avocado is nice and ripe or you will have a hard time mashing it. When you press the avocado it should easily give to the pressure.

This is such a classic favorite and great for the upcoming football season! I never did want to try guacamole-its appearance is not very inviting, but I am glad I did. Love the stuff.
